Free Saturday? What?

We had an entire Saturday with nothing on the schedule.  Yes, this seems strange to us too.  So, we did chores around the house.  I finished making my skirt that I started three weeks ago (It only actually took about 3 hours) and we got some more plants for our garden.  I am so excited about the fresh eggplant that we will have that I've actually started pulling out eggplant recipes.  This adventure brought out some of my old favorites.  Look for them soon.  Anyone have any good eggplant recipes to share?  I can't try them until later on account of my eggplants are not actually planted yet.  It was way too hot today.
